So good! I made the marinade featuring cara cara orange for my acid and both the oranges and portabellos (and the lettuce and tomato and the flour for seitan lol) were fresh from the local farmers market

Recipe for the dip?
I don’t really have a recipe for it but from what I remember doing I started with a very basic roux with coconut oil and flour (I used coconut oil and later coconut cream since they both go solid at room temp and I wanted that thickness for the right consistency). I added a little bit of arrowroot powder to amp up a sticky thick consistency to really make it nacho cheesy. From there slowly add oat milk or whatever plant milk you have and coconut cream and let it thicken. While you stir out any lumps. Add lots of nooch and salt and pepper and msg and probably a little more nooch. I added some apple cider vinegar and probably could have added more to cut further through the inherent sweetness of the coconut ingredients. If you have shredded vegan cheese you can add it in at any point after you’ve added your liquid but it’s not necessary. I added some jalapeno hot sauce and liquid smoke to get a Smokey spicy flavor and then added annatto for coloring and paprika will give you a similar color.

I haven't tried freezing these, but I think if I were going to i'd switch out lettuce for sauteed spinach or something. Everything else I imagine would defrost fine!

It’s honestly not hard at all and I have never bought vital wheat gluten! I just wash my flour (this is my first time saving the starchy water and I’m excited to cook with that too!)

I didn’t feel like it was, but I will say seitan is a weekend thing for me because it’s a little time consuming.
How do you season your Seitan chicken? I assume you marinade it? :)
Once I’ve washed the flour to isolate the gluten from the starch I let it rest and then I fold dry seasonings in like salt and pepper maybe some paprika etc. let it rest again then stretch and twist and knot it and fry it off before letting it simmer in veggie stock that I’ve seasoned with sage and rosemary and more salt. When you shred the seitan or cut up your cutlets you can totally marinade it then too. I actually cooked it off in the leftover asada marinade from the mushrooms and it was absolutely divine!

Shiitake are definitely known for a "meatier" taste and I used some sauteed shiitake in my marinade, but yeah I think portobello mushrooms are pretty regularly used as a "beef" sub because their size and texture makes them good for marinating and grilling.

Are you frying in a light layer of oil folded side down? Also try pressing down on it while it's frying folded side down if your wrap isn't heavy enough to really weigh those folds down. What kind of tortilla are you using?

These look awesome and sound delicious, and I've never tried the crunch wrap thing. I've always wondered why do this when you can just make a burrito and brown it in the pan? It's the same shit but different shape right? I guess I'm only asking cuz I've never tried the crunch wrap but I've made many hundreds of burritos and it just seems like the same deliciousness with less origami
Oh no no no the crunch wrap has a crunchy tostada center. It’s delightfully different than putting something like Fritos or tortilla chips in a burrito just trust me!
