Make doors, fences, iron bars, and other things with holes in them actually have matching hitboxes
This has already been done with the anvil and hopper so why not those other blocks? This would allow for things like shooting projectiles through holes and interesting mob farms for smaller mobs.

First off, cool idea! Second, *absolutely not* with the doors. The whole point of doors is that they protect you from hostile mobs. Protection from mobs is the most important door use for anyone using a door within the first two hours of time on a world. If projectiles can go through the slits in a door, then mobs can see it as an opening. Skeletons can shoot through it, and Creepers would no longer consider it a wall and thus would be able to detonate if there's nothing but a door separating it from you. This is less important with the iron bars and fences, but the same principle can apply - these items are sometimes used as alternatives to windows, so again it removes utility from them since they can only be used decoratively in an already-secure house.
Perhaps mobs aren’t able to see through them similar to how they can’t see through glass so the only things that could fire through them are players

Yeah.... no. This idea doesn't mesh with texture packs/resource packs. It's a really cool thought, but there are a few problems with your idea, as the others have brought up
Yes balancing iron bars
Fences are 1.5 blocks tall, even though they looked about 1 block, right? If the hit box matched a fence or a wall, couldn't animals easily escape? Although, with something like iron bars, I can see the use.
I like the iron bars idea. Like a one way mirror kinda deal. It would be comparable to attacking through a fence like in many zombie movies/shows.
