This looks like one of those slingshot rides, rather than a roller coaster.
There's a lot of variables involved with the question though - how big a bird for a start? If we assume a larger sea bird like a pelican, then the even modest speeds would probably do some damage. When you consider that hypercoasters regularly go above 60mph, it's definitely possible that you could suffer catastrophic injuries should a big bird get in your way.
Birds aren't likely to cross a coaster train path though, as the regular noise and usually bright colours of the trains would scare most animals.
Does anyone remember when Fabio was riding a rollercoaster and a bird hit him at speed and he ended up back at the beginning of the ride covered in bird blood? The bird was dead for sure

Going by Mythbusters "bug special" a person cannot take more than a 2000lb force hit to the forehead. Chest 400-4000lbs, depending on age. The neck area around the esophagus (the critical thyroid area??) is vulnerable to a 76lb hit. Now the Goliath beetle, weighing up to 100 grams, when hit at 85mph gives just over 100lb of force and enough to kill you if it hits you in the throat.
Someone can do the math for an average sized pigeon.
Edit: Thanks to those that mention surface area. I see now that it complicates things further.
It's not that simple because the pigeon is larger, thus spreading out the force over several areas.

I have had a white cockatoo hit me square in the face on a motorcycle at about 70kmh and I thought it broke my nose, just a lot of blood and a frigging sore nose for a few days though.
Formula Rossa in Abu Dhabi goes up to 240 kph (149.1 mph). A bird to the face on that would almost certainly fuck you up on that.
You have to wear safety goggles in case things like insects hit your eyes.

Well, yes. A bird to the face at any speed puts you at risk of disease, bugs, or maybe a painful lesson that you're allergic to birds. Don't touch wild birds.
I recall this show called ‘1000 Ways to Die’ which featured something like this. The episode is called "Bird Brained". Apparently the person stuck her head out through a limo sunroof and a pigeon happen to fly into her breaking her neck from the collision.
However, not sure if there is any truth to this or just one of those urban myths?

A slingshot ride apparently reaches 60mph (96kmh) in about 2.5 seconds.
According to Google, a pigeon weighs 2,1kg.
F = 2,1 * 38,4 = 80,64N = 8,22kg;
8,22kg of force right to the jaw.
So it can do a bit of damage, yeah.

No math needed. An Andean Condor to the face of an elderly woman on the fastest part of the worlds fastest roller coaster is very likely to be fatal. Regular small-medium bird to the face of a healthy person on a normal roller coaster, they might get a bloody nose.
